On Knowing Your Herbs

There is a difference between knowing that rosemary grows in the garden and knowing rosemary - its sharp resinous warmth on winter mornings, its preference for poor, dry soil, its companionable silence.

The herbalist walks through the garden with different eyes. Every plant is a conversation - an offer of something, a request for something in return. The sage wants less water than you think.
